In contrast to the picture postcard views of Edinburgh Castle and the Firth of Forth from the terrace, the interiors provide the ultimate in modern luxury with warm yet airy décor throughout the cocktail bar and restaurant.

Edinburgh based Tony Singh is the Head Chef and co-founder of Oloroso, and has a fresh approach to food, sourcing the best of seasonal and Scottish produce. Tony has received a number of awards for his culinary skills and in 2000 he was awarded the prestigious title of ITV Chef of the Year.

We use rib-eye's that have been hung and are well marbled. We have a secret dipping sauce and would serve with an oxtail and morel farce, seasonal vegetables and light port jus.
